HKCEC F&B Team Shines At Culinary Competition

HML-FB-TeamThe Food & Beverage team of the Hong Kong Convention and Exhibition Centre (Management) Ltd (“HML”) won a total of seven awards at the Hong Kong International Culinary Classic (HKICC) 2011 (11 – 14 May 2011): two Gold, two Silver and three Bronze.

HKICC is the largest culinary competition in Asia, this year attracting 900 participants from 13 different countries, and HML’s success gave powerful recognition to the top creative culinary skills and all-round professionalism of its in-house F&B team.

Commenting on the achievement, Deputy Managing Director of HML Ms Monica Lee-Müller said, “For 22 years now, HML’s F&B team has combined culinary flair and service professionalism on every possible occasion."

Unlike most other exhibition and convention facility management companies, since the opening of the Hong Kong Convention and Exhibition Centre (HKCEC) in 1988, HML has had its own in-house F&B team.

To ensure the success of this bold move, HML has assembled a F&B team of over 300 full-time staff (including 150 chefs and 140 restaurant and catering service staff), backed up by experienced teams of catering sales personnel and event planning and coordination managers.

In addition, it has provided regular and high level on-the-job training to ensure consistency in creativity and quality.

As a result, HML’s F&B team successfully caters to nearly 400 banquets annually, as well as ensuring the smooth operation of the HKCEC’s seven restaurants. The team also provides customised catering services to over 600 exhibitions, conventions and other events at the HKCEC.

In 2010/11, the F&B team served a phenomenal 833,127 diners at HKCEC restaurants, another 625,577 customers patronising concession stands, and a further 805,925 guests attending gala dinners for multi-nationals, corporate and association banquets, and weddings.

These F&B events ranged in scale from huge annual dinners for major corporations and cocktail receptions for Heads of State, to gala banquets, dinner buffets, Chinese and Western business lunches, and quick meals on the run from concession outlets.

HKICC is one of only four culinary competitions endorsed by the World Association of Chefs Societies, and is run and judged entirely according to the Association’s rules and judging criteria.

Co-organised by the Hong Kong Chefs Association and Hong Kong Exhibition Services Ltd, HKICC 2011 was held during HOFEX 2011 to promote culinary excellence among Chefs, Cooks, Pastry Chefs/Cooks and Apprentices from near and far.
