A select number of Cornell Hotel School students will work side-by-side with three distinguished chefs this semester to create exquisite dining experiences at Ristorante Banfi in Cornell's Statler Hotel.

 

Each spring students in the School's Specialty Food and Beverage Operations course invite renowned chefs to share their signature cuisine and skills with the class and the Cornell community.

 

"The guest chefs are role models for our students," said Senior Lecturer Giuseppe Pezzotti '84, MMH '96. "The students learn a lot by working alongside these culinary masters."

 

This year's Guest Chef Series opens on Saturday, February 18, with Chef Douglas Keane, a 1993 graduate of the Hotel School. Keane is executive chef and partner of Cyrus, among the most distinctive restaurants in California's Sonoma County.

 

On Saturday, March 11, guests will be treated to the mastery of contemporary American cuisine with French influences by Chef Jonathan Benno of New York City's per se, rated three stars by Michelin Guide New York City 2006. Concluding the series on Saturday, April 29, is ARAMARK's Senior Executive Chef Michael Crane, overseer of the "World Menu" cuisine for the 2004 Summer Olympics in Athens.

 

Student teams manage each aspect of these dinners. They promote the event, plan the menus, prepare and serve the meals, and conduct a post-event financial analysis. All dinners feature a reception at 6:00 p.m., followed by dinner at 7:00 p.m. Dinner includes a four-course meal with wine pairing and a discussion session with the guest chef. Seating is limited and reservations are required.

 

For 16 years, Cornell's Guest Chef Series has welcomed a world-class array of chef-celebrities, including Daniel Boulud, Emeril Lagasse, Masaharu Morimoto, Wolfgang Puck, Marcus Samuelsson, Ming Tsai and Roger Verge.
